I love crepes

One egg

One cup of milk

One cup of flour

Pinch of salt

Mix in a big bol (use a mixer or a fork) all the ingredients until the batter is smooth (add the milk and egg first then add little by little the flour). Use a big bole to avoid spill!

Add flavor like vanilla, cinnamon, butter, maple syrup … if you like.

Optional if you want to make a crepe with veggie add half cup of corn or half cup of rice (1/4 each work good also).

Use a non sticky pan pre heat it at med/high. Put fat in the pan (butter, margarine or oil). Make sure it does not turn black (it’s bad for you). Put about 3/4 of a cup of your mix in the pan and use gravity to make your crepe round.

Flip when it’s golden on one side and it`s ready when the second side is also golden.

Tips

-if you want to transform your crepes into pancake add a two pinch of baking soda in it

-if you don’t have milk use water

-if you don’t like milk use alternative like coco water or milk, almond milk, soy milk, rice water …

-if you don’t have egg it’s still gonna work just add a little bit of flour

-if you want it to be more healthy use different flour like buckwheat, add oat, fruits, nuts …

-in brief use the basic and play with it !

-to know if the mix have a good ratio liquid / flour, I use a fork and when I think the mix is finish if the mix drop and I can draw a pattern that would stay for 2-3 second on top of the mix it means that I have the good ratio of liquid and flour that I like.
